Easy Spiced Hot Fruit

 

Ingredients

1 large can pears (halved or sliced)

1 large can mandarin oranges

1 large can peach slices

12 oz. package cranberries or sweet cherries

1 medium can pineapple chunks

            -Drain juice but don’t use in recipe.

Sauce

-¾ cup brown sugar

-½ cup butter

-½ tsp cornstarch

-¼ tsp curry

 

Instructions

  1. Mix sauce ingredients in small pan and heat.
  2. Put fruit in a 5-qt. Oven-proof dish and pour sauce over top.
  3. Bake at 325 degrees F for 1 hour.

Annie’s Fruit Salsa and Cinnamon Chips

 

Prep time: 15 minutes             Baking time: 10 minutes        

Ingredients

-2 kiwis, peeled and diced

-2 Golden Delicious apples-peeled, cored, and diced

-8 oz. raspberries

-1 pound strawberries

-2 tbsp granulated sugar

-1 tbsp brown sugar

-3 tbsp fruit preserves, any flavor

-10 (10 inch) flour tortillas

-butter flavored cooking spray

-2 tbsp cinnamon sugar

 

Instructions

  1. In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, white sugar, brown sugar, and fruit preserves. Cover and chill in the refrigerator for at least 15 minutes.
  2. Preheat oven to 350 degrees F.
  3. Coat one side of each tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
  4. Bake in the oven about 8-10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approx. 15 minutes. Serve with chilled fruit mixture.

Sour Cream Rhubarb Cake

 

Prep time: 15 minutes             Baking time: 30-35 minutes                Serves: 12

 

Ingredients

-1 ½ cups granulated sugar

-½ cup melted butter

-1 egg

-1 cup sour cream

-1 tsp pure vanilla extract

-1 tsp baking soda

-2 cups flour

-1 ½ cups chopped rhubarb, fresh or frozen

 

Topping

-⅓ cup sugar

-1 tsp Penzeys cinnamon

 

Instructions

  1. Preheat oven to 350 degrees F.
  2. Grease a 9x13 pan and set aside.
  3. In a mixing bowl, combine the sugar, butter, egg, sour cream and vanilla. Mix well.
  4. Stir in the baking soda and flour.
  5. Add the rhubarb and mix to combine.
  6. Spread the batter in the pan.
  7. In a small bowl, combine the sugar and cinnamon. Sprinkle over the batter and bake for 30-35 minutes.

Rhubarb Cake

Ingredients

-½ cup butter

-1 ½ cup brown sugar

-2 cups sifted flour

-½ tsp salt

-1 tsp baking soda

-1 cup milk

-2 cups Rhubarb, cut fine

 

Topping:

-⅓ cup sugar

-1 cup coconut

-¾-1 tsp cinnamon

-chopped nuts (optional)

 

Instructions

  1. Cream butter and sugar.
  2. Add flour sifted with salt and baking soda alternately with milk.
  3. Stir in rhubarb. Sprinkle with topping before baking at 350 degrees F for 40 minutes in a 9x13 in pan.
